Fillet Fish

I'm looking for a fish market where they will properly fillet fish for me.

Hi Bertie,

this can be a problem because mostly the Portuguese prefer fish either whole or cut down the centre

I've found however that all of the fishmongers including the supermarkets can and will prepare, scale, fillet, clean, cut the fish anyway you like so long as you can make them understand what you want- i usually mime if i don't know the words and it seems to work a treat

filé de peixe - taken off the bone

eschalade ? or something very similar asks for it to be cut in half along the bone - perfect for dourado / sargo etc

Great fun to have a go yourself, much easier for most fish than you'd think and there are lots of web-sites that tell you how.

We recently bought some lovely sole and my husband found out how easy it was to fillet it. I think he watched a few YouTube videos for instruction, but it worked out well for us. Give it a try - like Steve01 says, it's worth having a go.

Thanks steve01 and jo james. I'll have to watch some instruction before being able to properly cut the fish and have something like a fillet as a result. Thanks for your help!

We had good luck at El Corte Inglés a few years ago. We bought an enormous fresh cod, had it filletted and fed it to Portuguese friends, one of whom had never had non-salt cod before.
I'm hoping to have similar luck getting a large salmon filletted for a dinner party in February.
